Escarole leaves are smooth, broad & less bitter than curly endive & form a rosette of leaves forming a loose head. Very popular in salads & among chefs it has a nutty, buttery, slightly bitter taste & a beautiful appearance. Close cousin to Chicory. Take care to plant in the early or late season as too much heat causes endive to be over bitter. Sow Direct: as soon as the ground can be worked, sow in thin rows & cover seeds every so lightly, about 1/8 or you can sow on the surface & water the seeds into the soil. Keep moist until germination. Harvest: leaves can be harvested individually or you can cut the entire plant, to blanch the center tie up the outer leaves into a bunch in the center for 2-3 weeks prior to harvesting.
