Fundraising Event for the Ugandan Orphanage Project

Thank you to everyone who generously contributed to this meaningful project

Dr Dilis Clare, Medical Herbalist & G.P and Pearl Finn would like to thank all those who attended their annual garden days. All who came enjoyed a relaxed and sunny afternoons. This unique event gave the public an opportunity to learn about herbs whilst contributing to a meaningful project in the developing world.

The selection of events from the garden days, to table quizzes and raffles raised €5,500 in total for Little Kevin's Nursery School an orphanage that fosters abandoned babies in Uganda. Taisce Gillespie, son of Dr. Clare and Eoin Finn, son of Pearl Finn will be working in the orphanage this summer.

Limeflower

Many of the streets and parks of Galway are lined by the majestic Linden or Limeflower tree which at the moment are in full bloom. Indeed the road that Health & Herbs is based (Sea Road) has a line of them which I cycle underneath daily on my trip in to work. These imposing, elegant trees have graceful arching branches, oval shaped leaves and yellow white flowers. When passing under a Linden tree breathe in the aroma of these flowers and you will be in for a joyous uplifting, calming surprise.

It is not surprising therefore that in herbal medicine we use Limeflowers as a remedy for nervous tension. It is calming and can be taken as a tea or in tincture for this effect. It will aid sleep and can be used for adults and restless children alike.

Limeflower is also a herb for heart problems and can be taken for high blood pressure especially when associated with arteriosclerosis (hardening of the arteries) because it relaxes the blood vessel walls.

Someone asked me on a herb walk the other day if living by Limeflower trees would make you calmer. This is a great question and one thing I know for sure is, if you are passing a Limeflower tree and you stop to smell the flowers - it definitely lifts you and brightens your day. So I think the answer is yes.

Mediterranean Vegetable Frittata

This is just like a quiche without the pastry which makes it lighter and much quicker to make for a supper dish with a mixed salad.
You can vary the vegetables depending on the season.

6 organic free range eggs
1 or 2 cloves garlic thinly sliced
1 medium red onion thinly sliced
1 red pepper deseeded and chopped up into small pieces
2 courgettes sliced thinly
8 cherry tomatoes halved
1 tsp dried thyme
1 tbsp fresh chopped parsley
pinch of chilli flakes
Black pepper
sea salt
1/2 pack of feta cheese

In a large frying pan heat some olive oil gently. Add the onion, garlic, peppers and courgettes and saute for a few minutes. Add the dried herbs and tomatoes. Sprinkle on the chopped feta cheese, salt and pepper.
Whisk the eggs together in a bowl and pour onto the vegetables and cheese.
Continue to cook gently until just beginning to set and then finish under a medium grill or if the frying pan is ovenproof finish in the oven until set and lightly browned.
Serves four with a mixed green salad.

Eggs are a perfect food - they provide protein, iron from the yolk, contain phospholipids - fats which are essential for proper brain function and sulphur which helps the liver in its detoxification processes. They do not raise cholesterol as they contain lecithin which helps to emusify fats making them easier to digest.

A series of summer courses for beginner gardeners will be offered next month by Living Gardens. The first of the courses is "Herbs and vegetables for the garden and container." and takes place on Saturday, July 11th in Rosscahill (located between Moycullen and Oughterard. This course will cover a variety of topics such as how to sow seeds, harvesting and taking care of plants. Courses run from 10am to 4pm and cost €50. A light lunch and tea/coffee are included in the price.
